Rooted in French techniques, meso brings together seasonal Japanese ingredients with fermentation, dashi, spices, and ideas drawn from food cultures around the world. Innovation is never the goal on its own. Deliciousness comes first — followed by a sense of discovery that opens up something new. Our wines are selected beyond region or style, with the flow of the entire course in mind. When food and wine come together, another dimension of flavor emerges. At the counter overlooking the open kitchen, guests can watch each dish take shape, engage with the chef, and experience food and wine at close range.
