At our restaurant, we serve eel in the traditional Edomae style. Live eel is first grilled without sauce, then steamed once, and carefully grilled again and again while being brushed with our secret sauce. Steaming removes excess fat, resulting in tender flesh and bones while preserving the eel’s rich flavor. In addition to our classic rice bowls prepared with our carefully crafted secret sauce, we also recommend shirayaki for those who wish to enjoy the eel’s natural flavor more fully.
