About Course Menu
We carefully source all our meat, fish, and vegetables with great attention, including ingredients rarely seen in Japanese restaurants, which we procure directly from Italy, as well as Japanese ingredients sourced directly from their producers. In tune with the seasons, we respond to the ingredients before us and prepare each dish in a way that places no undue burden on them, allowing you to fully enjoy the natural character of each ingredient. As our menu changes daily for this reason, please do not hesitate to let us know if there are any ingredients you do not prefer.
