Under the concept of "Ensemble (Harmony)," we present a special menu created by Head Chef Hayashi. Regarding this concept, Hayashi explains, "Ensemble means 'harmony,' akin to the tea ceremony's spirit of 'unity between host and guest.' It encompasses the harmony between the hotel and guests, Fauchon (France) and Kyoto, cuisine and wine, sweets and tea, chefs and producers, ingredients, and each individual involved. I chose this word considering that a place is a good hotel and restaurant when everything is harmonized."
