About Course Menu
Under the concept of "Ensemble (Harmony)", we offer special menus created by our head chef, Hayashi. Hayashi explains the concept as follows: "Ensemble means 'harmony', which carries the same significance as the spirit of 'union' in tea ceremony. The hotel and the guests, Fauchon (France) and Kyoto, cuisine and sake, sweets and tea, chefs and producers, ingredients, and each staff member involved. A good hotel and restaurant is one where all elements are in harmony, and that is why I chose this word." Under this newly presented concept, enjoy the dishes at "Grand Café Fauchon" led by a talented chef pursuing ideals.
