Raised primarily from Japanese Black cattle in a natural, verdant environment and fed carefully selected fermented feed, the beef is characterized by its fine texture and tender mouthfeel. With further aging, excess moisture is removed, resulting in a rich umami and a distinctive aged aroma that deepens with every bite.
