About Course Menu

This is a new kaiseki course at Gyoan Senjojiki that reflects each guest’s requests while making the most of the finest seasonal ingredients of the day at that very moment. Our head chef carefully crafts each dish with uncompromising attention to bringing out the natural flavor and unique appeal of every ingredient. The ingredients used are purchased by the proprietor at the market on the morning of the day of service (for some types of fish, aging enhances their umami, so such fish are purchased the day before).
