At Gyoan Senjojiki, our traditional live-prepared sea bream reveals the true deliciousness of sea bream. We hope to show how a single knife technique can so greatly transform its texture and umami. In addition, we use fresh, lively abalone, taken directly from the fish tank just before preparation.
