In Japanese cuisine, there has been a longstanding tradition of offering seasonal ingredients to the gods, making it a celebratory ritual. Another pride of our restaurant is the <seasonal hors d'oeuvres> course, which is crafted to represent the celebration of autumn with a good portion size and serving style. It provides enjoyment with a toast and a stylish dessert presentation. It is a course particularly popular among women for its small portions with a variety of dishes. With mountains beginning to blossom and gain color, it's the season of cherry blossoms. A picnic bento-style appetizer wrapped in furoshiki mimicking cherry blossom viewing alongside a toast sake brings the footsteps of "spring." The unique bitterness and aroma of mountain vegetables like broad bean and butterbur buds become a blissful spring taste in harmony with sesame oil. The sweetness of domestic bamboo shoots is deeply moving. Clams and oysters are plump and rich, leaving a delicious aftertaste. Additionally, sakura shrimp and whitebait, when lightly coated, have their aroma and flavor condensed into a supreme dish. Not only visually but also through taste, it is sure to make you feel late autumn. Let us banish the pandemic and celebrate the flavor of seasonal freshness at this moment, embodying the Japanese spirit of "seasonal awareness" through all five senses.
