Embracing the samurai spirit, they approach ingredients with gentlemanly respect and carefully balance oil to prepare the finest tempura suited for each season, day, or occasion. Our course begins with our renowned vegetable puree and seasonal sashimi, followed by tempura featuring prime ingredients like kurumaebi (prawns), anago (conger eel), and kissu (Japanese whiting)—traditional seafood from the Edo era. This lavish and grand course also includes seasonally delicious ingredients of the moment and rare, high-value premium ingredients. For this course, we additionally offer freshly fried tempura of oysters (or sea urchin or others) set to reach their peak season. Enjoy the ultimate delight of freshly fried tempura at the counter, conversing with the chef. The craftsmanship provided with confidence by "Isshin-kai," the only tempura specialist chef association in Japan, is underscored by its 115-year history. Here lies the essence of Edo-style tempura.
