~Domestic Matsutake Mushrooms~ The season for fragrant domestic matsutake mushrooms has begun again this year. Carefully selected and freshly sourced, our matsutake mushrooms offer a satisfyingly firm texture and the distinctive aroma of autumn. ~Hamo Cuisine~ One of the signature flavors of summer in Kyoto. Hamo is a light and delicate fish with a clean taste, balanced richness, and concentrated umami. On the other hand, because it has many small bones, its preparation requires the highly skilled technique known as honegiri, in which the knife is inserted about 25 times every sun (approximately 3 centimeters), leaving only the skin intact. At our restaurant, we proudly serve it using techniques refined through training in Kyoto, its true home. We also offer an à la carte menu available for same-day orders.
