About Course Menu

Manoir operates its own game processing facility in Mori, Hokkaido, where local hunters and staff harvest wild game in the finest condition. By doing so, we help improve the income of local hunters, contribute to reducing agricultural damage in the region, and at Restaurant Manoir, serve our guests the finest game at its very best. In addition, we work in partnership with local governments through the hometown tax donation program, proposing a system that supports municipal finances, which in turn help sustain pensions and social security. As a restaurant in Japan, Manoir is committed to building a social model supported through food. In addition to game, we use carefully selected ingredients sourced from around the world to create French cuisine that treasures the seasons, offering both delicacy and surprise.

This is a special 10-course chef’s tasting menu featuring Manoir’s signature selection of wild ingredients that evoke the grandeur of nature, together with the finest seasonal produce of each time of year. For the main dish, you may choose 2 plates from 6 selections available on the day. Game dishes not included in the 19800円 course are also available in this course. Each guest will receive 1 bottle of Manoir original caviar. For guests who visit multiple times within the same season, the chef may prepare different dishes from your previous visit based on his inspiration. Please let us know your dining history and any preferences when making your reservation. If you do not prefer game, we can prepare a course using seasonal ingredients that does not include it, so please let us know.
