About Course Menu
Manoir owns its own game processing facility in Mori, Hokkaido, where local hunters and staff handle game under the best possible conditions. This helps improve the income of local hunters, contributes to reducing agricultural damage in the region, and enables Restaurant Manoir to serve the finest game to its guests in peak condition. In addition, we collaborate with local municipalities on the hometown tax donation program, proposing a system that supports municipal finances, which in turn help sustain pensions and social security. As a restaurant in Japan, Manoir is committed to building a social model supported through food. In addition to game, we use carefully selected ingredients sourced from around the world to create delicate yet surprising French cuisine that honors the seasons.
Menu
This is a special 10-course menu, crafted with the chef’s utmost dedication, featuring wild ingredients that evoke the great natural surroundings unique to Manoir, along with seasonal delicacies of each season. For the main dish, you may choose from four options available on the day. For guests who visit us multiple times within the same season, the chef prepares different dishes from your previous visit, inspired by his creativity. Please let us know your visit history and any preferences when making your reservation. If you are not fond of game meat, we can prepare a course featuring seasonal ingredients that does not include it, so please let us know.

- When making a reservation, each guest is asked to choose their preferred main dish. After consultation, please select either "Gibier (recommended)" or "Non-Gibier" and indicate your choice in the "Requests/Comments" section. *If no choice is indicated, the main will be served as Gibier by default. - If you have any food allergies, please provide the following details in the "Requests/Comments" section: 1. Specific ingredients, 2. Ability to consume when cooked, 3. Ability to consume broths or extracts. - If there are any ingredients you don’t like, please mention them in the "Requests/Comments" section. - The displayed prices are subject to an additional 10% service charge.
