Moreover, by using the chef's specialty roasting method, you can enjoy a flavor that is free from any gamey smell and has concentrated umami. We have received feedback saying, "It doesn't smell like game at all, it feels like I'm eating roast beef." We also have a wide selection of wines that pair well with game meat. Additionally, the managing company of Minamoto, Japan Energy Food, carries the mission of "promoting global health through Japanese cuisine," and game meat can indeed be considered purely domestic meat. In essence, the act of turning animals that cause agricultural damage into sources of nourishment reflects the Japanese spirit of valuing life and appreciating what we receive. The meat we procure is fully utilized, with tougher parts like tendons being cooked into dishes like hamburg steak or stews creatively. Of course, you can also enjoy various other meats and dishes, aiming to become a beloved spot that local patrons can casually visit on a daily basis.
