Chef Yusuke Murayama is from Yamagata Prefecture. After graduating from high school, he trained in Yamagata and Tokyo before returning to his hometown of Yamagata, where he opened Bistro Pas Mal in Tendo, Yamagata Prefecture, at the age of 25. In 2017, he relocated and reopened at its current location as Restaurant Pas Mal. Valuing sauces, which can be called the very essence of French cuisine, Chef Murayama’s true specialty is classic French cooking. This is French cuisine expressed through Yamagata ingredients by a chef with a deep understanding of his hometown, Yamagata.
