Chef Yusuke Murayama is from Yamagata Prefecture. After graduating from high school, he trained in Yamagata and Tokyo before returning to his hometown of Yamagata, where he opened Bistro Pas Mal in Tendo, Yamagata Prefecture, at the age of 25. In 2017, he relocated and reopened at its current location as Restaurant Pas Mal. Valuing sauces, the very essence of French cuisine, Chef Murayama’s signature style is classic French cooking. These French dishes are expressed through Yamagata ingredients by a chef with a deep understanding of his hometown, Yamagata.
