About Course Menu
Chef Yusuke Murayama is from Yamagata Prefecture. After graduating from high school, he trained in Yamagata and Tokyo before returning to his hometown of Yamagata, where he opened Bistro Pas Mal in Tendo City, Yamagata Prefecture, at the age of 25. In 2017, he relocated and reopened at the current location as Restaurant Pas Mal. Cherishing sauces, which can be said to embody the essence of French cuisine, Chef Murayama’s true specialty is classic French cooking. These French dishes are expressed through ingredients from Yamagata by a chef with a deep knowledge of his hometown.
