This is a course focused on pairings, featuring a selection of 6 to 8 types of sake, complemented by seasonal ingredients carefully chosen from around the country. We begin with a small appetizer to quietly convey the flavors of the season, then proceed to sashimi and this month's specialty dishes. Each cup of sake is selected in consideration of the aroma, temperature, and flavor harmony it creates, all sourced personally by the proprietress, a sake sommelier, who visits sake breweries nationwide. Seasonal rice, carefully cooked in a traditional kamado stove, exudes an inviting aroma and rising steam, drawing you into a world of culinary and sake delights. The meal concludes with a soup and a seasonal dessert, leaving a rich aftertaste in your mouth.
