About Course Menu
To help prevent summer fatigue from building up— Yakuzen is a culinary philosophy rooted in Eastern medicine, based on the idea that food affects the body just as medicine does. Inspired by this approach, this course highlights the relationship between the seasons and the body through its composition of dishes. Incorporating fermented seasonings and seasonal ingredients, each dish is thoughtfully crafted to offer gentle flavors that settle naturally in the body, along with a lightness that remains pleasant even after the meal.
