At Seian, here in Gakugei Daigaku, we have now entered our 24th year, striving to be a place where adults can enjoy a relaxed meal. What we value most is bringing out the natural character of seasonal ingredients. We take great care in our cooking, but never overdo it. Without adding anything unnecessary, we focus on drawing out the ingredients’ inherent flavor. For example, our ohitashi features seasonal vegetables steeped in dashi made from honkare katsuobushi and Rishiri kombu. Honkare katsuobushi from Kagoshima is aged over a long period, developing a deep umami richness. Rishiri kombu produces a clear, refined dashi. Rather than showiness, we aim to serve dishes that naturally convey the quality of the ingredients. Because simplicity leaves no room for disguise, we will continue to carefully deliver honest, authentic flavor. 📌This Month’s Business Schedule In August, we are closed on Mondays.
