In the past, when harvests could vary significantly due to weather conditions and other factors, it was of life-or-death importance to preserve harvested produce and caught prey until the next supply of ingredients could be secured.
We have only been preserving foods using electric refrigerators and freezers for about 100 years. For 5 million years since the dawn of humanity, our ancestors, except those in extreme cold regions, consumed foods preserved with limited resources using methods such as salting, drying, or fermentation by microorganisms.
It is said that the basic seasonings of Japanese cuisine, such as "sake," "vinegar," "mirin," "miso," and "soy sauce," were born when koji mold adhered to the rice offered by farmers. Without the encounter between rice and koji mold, the current Japanese food culture might not exist. The sushi that emerged from Japan's landscape, surrounded by the sea and reliant on rice farming and fishing, shows there is no wastefulness in it.
What is the definition of "delicious"?
In ancient times, in order to survive, it was necessary to determine whether food was safe and nutritious, requiring the senses of smell and taste. It is believed that the natural sense of deliciousness to our bodies and the tastes considered delectable in those times are ingrained in our DNA today.
We express renewed gratitude for the wisdom and techniques our ancestors developed through trial and error to survive, and by incorporating modern technology, we continue to explore what true deliciousness is.
