In the first half, you can enjoy around seven seasonal à la carte dishes that change monthly, and in the second half, you can savor about 10 to 11 sushi items that vary with the time.

Chef's Choice Course

The seasonal ingredients, carefully selected daily at the market, primarily feature local products such as Tuna from Yama Yukisama and produce from Morozaki, Aichi Prefecture. These are complemented by a fragrant rice seasoned with a blend of two main types of red vinegar and rice vinegar, and expertly crafted with traditional Edomae techniques and spirit.
