An invertebrate refers to living creatures without bones. Common sushi often relegates squid, shrimp, and shellfish to supporting roles. However, their texture, aroma, and depth of umami flavor do not pale in comparison to any seafood. The "Invertebrate Revenge Course" is a unique 10-piece nigiri course composed solely of squid, shrimp, shellfish, and sea urchin, with no use of vertebrates. Please take your time to savor the delicate textures and contrasting flavors skillfully drawn out by our artisans.
