Invertebrates are creatures without bones. In typical sushi, squid, shrimp, and shellfish are often considered supporting roles. However, their texture, aroma, and depth of flavor are in no way inferior to those of fish and other seafood. The "Invertebrate Comeback Course" is an unusual set of 10 nigiri sushi pieces crafted exclusively with squid, shrimp, shellfish, and sea urchin, without using any vertebrates. Please savor the delicate texture and contrast of flavors brought out by the skill of our artisans.
