"Invertebrates" refers to creatures that do not have bones. Squid, shrimp, and shellfish are often considered secondary in typical sushi, but their texture, aroma, and deep umami flavor are in no way inferior to fish. The "Invertebrate Rebellion Course" is a unique 10-piece nigiri course composed solely of squid, shrimp, shellfish, and sea urchin, using no vertebrates. Please take your time to savor the delicate textures and the contrast of flavors brought out by the craftsmanship of our chefs.
