Our cuisine is carefully woven into a world on each plate, layering the vertical thread of a food culture that has continued since the Kaga Hyakumangoku era with the horizontal thread of the seasonal blessings of Kanazawa and Noto. By bringing the principles of tradition into harmony with a contemporary sensibility, we prepare each dish at the very moment when its ingredients are at their finest. Even the water we use is deep ocean water brought from Noto. The natural richness of the land comes into full bloom through the water of that land. Please enjoy a dining experience found only here and now, defined by dignified umami, refreshing aromas, and even the subtle interplay of light and shadow in the setting.

With a discerning eye for the seasonal bounty of Kanazawa and Noto, our chefs complete each dish before your eyes, creating a once-in-a-lifetime menu. From the precise control of heat to the finest knife work, every detail reflects the craftsmanship of our artisans, bringing out the fullest expression of each ingredient’s natural character. The rising aromas, the sound of charcoal fire, and even the seasonal colors reflected in the tableware deepen the pleasure of the dining experience. From fish, meat, and vegetables to the finest seasonings, we give first priority to high-quality ingredients from Ishikawa. For what cannot be found in Ishikawa, we source from Hokuriku. We prepare every ingredient so that it embodies the unique charm of this land and this moment. We also value the local culinary traditions and customs that have been passed down through generations, embracing the wisdom of the region and refining it through a contemporary sensibility. Thoughtful methods in harmony with the land are woven throughout. Through the seasonal bounty of all four seasons, please enjoy to your heart’s content the richness and depth of Ishikawa. □ Our Commitment to Water ――― The blessings of Ishikawa deserve the waters of Ishikawa. All water used in our cooking is either deep ocean water from Noto or brewing water also used by sake breweries in Kanazawa. The pure, impurity-free clarity of the deep ocean water defines the character of each ingredient, bringing a clear and refined flavor to every dish.
