Tatsumiya, located along the Uji River in Kyoto's inner parlor, started as a tea wholesaler and has been inventing matcha dishes for over 80 years. The owner of the eighth generation offers the techniques and knowledge of matcha, which were handed down from the seventh generation, with a new sense.
