フレンチを軸に、発酵、スパイス、出汁を重ねながら、素材の組み合わせや流れを楽しむ6品のテイスティングコースです。 季節の食材を軸に、温度や香り、食感の重なりを意識して構成。軽やかな前菜から魚料理、メイン、デザートへと、一皿ごとに移り変わる味わいをコースの流れとともにお楽しみください。 Built on French technique and layered with fermentation, spices, and dashi, this six-course tasting menu explores the harmony of ingredients and the progression of flavors. Centered on seasonal ingredients, each dish is thoughtfully composed with careful attention to temperature, aroma, and texture. From delicate appetizers to fish, the main course, and dessert, the menu unfolds as a seamless culinary journey, with each course revealing a new expression of flavor.
