We carefully select popular sushi toppings such as fatty tuna and sea urchin from within and outside the prefecture to ensure satisfaction. Additionally, we offer the owner's original sushi creations, combining local ingredients, such as fatty tuna with black maitake mushrooms or sea bream with persimmon petals (edible chrysanthemum). The sushi rice is a blend of locally grown, low-pesticide, and low-chemical fertilizer Koshihikari and Koshihibuki rice from Minamiuonuma. Our sushi is crafted with the traditional Edo-style techniques and new ideas. Please enjoy it with refined local sake from Uonuma, known for its delicious water and air that perfectly complements sushi.
