The Minami-Awaji-produced Three-Year Torafugu Koji Premium Course is a special advance-reservation plan that allows guests to use their hometown tax donation dining vouchers to indulge in the king of winter delicacies in a truly luxurious way. At Koji dining39 Citrus, a Japanese and kaiseki restaurant in Aridagawa, Arita District, Wakayama Prefecture, we carefully prepare each table and menu for every party to provide a truly special dining experience. ■About the Plan and How to Use It This plan is a premium course exclusively for guests who hold a dining voucher offered as a hometown tax donation gift by Aridagawa. In addition to the flavors of a standard fugu kaiseki course, you can enjoy our restaurant’s signature seven-course menu, which combines house-made fermented seasonings (koji) with the blessings of Suhara Port. ■Menu (7 Courses) 1. Appetizer | Fugu skin dressed with ponzu koji, served with agar beads and yuzu 2. Sashimi | Thinly sliced three-year torafugu from Awaji Island (tessa), served with fish salt 3. Hot Pot | Awaji Island three-year torafugu tecchiri hot pot, served with house-made ponzu koji 4. Grilled / Specialty Dish | Fugu milt with light salted dashi sauce, finished in a citrus bowl 5. Fried Dish | Fried fugu seasoned with salt koji 6. Rice Dish | Choice of closing dish (including zosui rice porridge infused with rich umami) 7. Dessert | Seasonal fermented dessert (such as citrus panna cotta) *Each dish is prepared using ingredients in their finest condition according to the day’s catch and the changing seasons. Parts of the menu may be subject to change depending on availability. ■Three Commitments of 39 Citrus 1. [Awaji Island Three-Year Torafugu Delivered Directly from Minami-Awaji] By raising the fish in the sea for one year longer than the usual two years, the flesh develops exceptional firmness, rich flavor, and abundant premium collagen. We carefully source the finest Awaji Island three-year torafugu directly from the region. 2. [Deep, Refined Flavor Brought Out by House-Made Fermented Seasonings (Koji)] We use house-made fermented seasonings such as shio koji, soy sauce koji, ponzu koji, and onion koji, all carefully prepared in-house. From our signature ponzu koji that enhances the delicate umami of torafugu to our fried fugu with salt koji, we offer an exceptional Japanese dining experience shaped by the power of fermentation. 3. [First-Draw Dashi Made from Kombu and Three Types of Bonito Flakes] Dashi, the foundation of Japanese cuisine, is made using fragrant first-draw stock carefully extracted from selected kombu and three kinds of bonito flakes. The result is a deeply satisfying flavor that lingers beautifully, down to the very last drop of the tecchiri hot pot. ■Seating, Access, and Reservation Conditions ・Seating: We offer semi-private horigotatsu rooms (for 2 to 15 guests) where you can relax and stretch your legs. *Please note that the inner tatami room for parties of 10 to 15 guests is a smoking-permitted seating area, and by law, guests under 20 years of age are not permitted to enter.
