[Fresh Kuroshio fish delivered directly from Suhara Port (prepared in five or more varieties)] The owner personally visits the fishermen of Yuasa Bay and Suhara Port each day to inspect and purchase natural local fish with his own eyes. Enjoy five or more varieties of fresh fish in diverse preparations such as hira-zukuri, usuzukuri, and lightly seared styles, accompanied by house-made seasonings of your choice, including shoyu koji, ponzu koji, and fish salt. 2. [Umami brought out by house-made fermented seasonings (koji)] We use carefully prepared house-made fermented seasonings crafted in-house, including shio koji, shoyu koji, ponzu koji, and onion koji. From sashimi to lightly seared lean Kuroge Wagyu beef, the power of fermentation enhances the natural flavor and tenderness of each ingredient, creating a taste that can be enjoyed comfortably by both seniors and younger guests alike. 3. [First dashi drawn from kombu and three kinds of bonito flakes] Dashi, the heart of Japanese cuisine, is made using a fragrant first dashi carefully extracted from selected kombu and three types of bonito flakes. From Tai Awagumo sticky rice and our signature Gratin Chawanmushi to the finishing seared sea bream rice with first dashi, we present a deeply satisfying kaiseki experience marked by the lingering resonance of fine dashi. ■Celebration meals and options for children (advance reservation required) To ensure that families dining across three generations can relax and enjoy their time together, we also offer meals for children. ・Okuizome meal: 3,850 yen (tax included) ・Junior meal set (for children around elementary school age): 3,300 yen (tax included) *If you would like children’s meals, please let us know in advance by phone (0737-52-3939) or in the requests section when making your reservation. ■Seating, access, and reservation information ・Seating: We offer semi-private horigotatsu seating where you can stretch out and relax (for 2–4 guests / connectable for 5–8 guests). *Please note that the inner tatami room permits smoking, so guests under 20 years of age are not allowed to enter.
