The course unfolds with a series of surprising dishes, including Crisp Eggplant Pani Puri, First Bonito Larb fragranced with refreshing Japanese pepper, and foil-steamed young sweetfish whose pleasantly bittersweet aroma and herbs are released the moment the banana leaf is opened. For the main dish, we offer Grilled Free-Range Chicken with Fermented Lemon Sauce, followed by Shirasu Khao Yam, in which herbs and the savory flavors of the season are mixed together.
