About Course Menu
CRAFEAT’s operating company, Taya Shikkiten Wajima Headquarters, suffered catastrophic damage in the 2024 Noto Peninsula Earthquake, including the total collapse of its buildings. As most of Wajima Taya Shikkiten’s Wajima lacquerware products were destroyed, they are currently available to view and use only at CRAFEAT Kanazawa. In addition, producers in Noto have also been affected: some have been unable to fulfill deliveries because their destinations were damaged, while others have themselves suffered from the disaster. At CRAFEAT, we are launching a Noto Reconstruction Plan to help support Wajima lacquerware and producers in Noto. This plan pairs our standard visitor course with Toraya Shuzo’s sake, Ikezuki, from Nakanoto Town. It is especially recommended for those who enjoy Japanese sake. From Kanazawa to Noto, creating a circle of recovery We hope that by visiting CRAFEAT, which fortunately sustained no major damage, you can help contribute to Noto’s recovery. Cuisine Chef Okumura’s modern Japanese cuisine is crafted with carefully selected ingredients, including fresh seafood chosen with a discerning eye and local vegetables personally sourced directly from producers. Naturally delicious, the cuisine is best described in a single phrase as food that defies convention and offers delightful surprises. The specialty is the Sashimi Tamatebako-zukuri, served in a lacquered jubako box. When the lid is opened, fragrant smoke from Kaga bocha rises gently. As you take a bite of the beautifully presented sashimi, its rich sweetness and toasty aroma melt smoothly on the palate and linger հաճiously from mouth to nose. All tableware and furnishings used are traditional crafts from Ishikawa and are also available for purchase. Please enjoy, together with your meal, the unique appeal of these artisanal works as experienced through actual use.
