About Course Menu

CRAFEAT, operated by Taya Shikki-ten Wajima Head Office, suffered catastrophic damage in the 2024 Noto Peninsula Earthquake, including the complete destruction of its buildings. As most of Wajima Taya Shikki-ten’s Wajima lacquerware products were destroyed, they are currently available to view and use only at CRAFEAT Kanazawa. In addition, producers in Noto have also been affected, as many of their delivery destinations were damaged and orders could not be fulfilled, while some producers themselves also suffered from the disaster. To help support Wajima lacquerware and producers in Noto, CRAFEAT is launching the Noto Reconstruction Plan. This plan includes the standard visitor course paired with Iketsuki, a sake by Toriya Shuzo of Nakanoto Town. It is especially recommended for those who enjoy sake. From Kanazawa to Noto, let us extend the circle of recovery. We hope that by visiting CRAFEAT, which sustained no major damage, you can help support Noto’s recovery. <Cuisine> The contemporary Japanese cuisine created by Chef Okumura features carefully selected ingredients, including seafood chosen with a discerning eye and local vegetables personally sourced from producers. Delicious as it is, in a word, it is cuisine filled with surprises that defies convention. The specialty is the Tamatebako-style sashimi platter, served in a lacquered jubako box. When the lid is opened, the fragrant smoke of Kaga bocha rises gently. As you savor the beautifully arranged sashimi, its rich sweetness and toasty aroma melt on the palate and pleasantly linger through the nose. All tableware and furnishings used are traditional crafts from Ishikawa and are also available for purchase. Please enjoy your meal together with the unique charm of these crafts, which can be truly appreciated through actual use.
