About Course Menu

The contemporary Japanese cuisine created with carefully selected ingredients—such as seafood expertly chosen by Chef Okumura and local vegetables personally sourced from producers—is, of course, delicious, but in a word, it is cuisine that defies convention and offers delightful surprises. A signature specialty is the Tamatebako-Style Sashimi, served in a lacquered jubako box. When the lid is opened, fragrant smoke from Kaga bocha rises into the air. With each beautifully arranged piece of sashimi, a melting sweetness and toasty aroma gently spread from the palate through the nose. All tableware and furnishings used are traditional crafts from Ishikawa and are also available for purchase. Please enjoy discovering the charm of these artisanal works through use, together with your meal.
