About Course Menu
The contemporary Japanese cuisine crafted from carefully selected ingredients—such as seafood expertly chosen by Chef Okumura and local vegetables he personally visits producers to select—is, of course, delicious, but in a word, it is “surprising cuisine that defies convention.” The specialty is the Sashimi Tamatebako-zukuri, served in a lacquered jubako box. When the lid is opened, the rising smoke is the fragrant aroma of Kaga bocha. As you take a bite of the beautifully arranged sashimi, its rich sweetness gently melts on the tongue, while the savory aroma pleasantly lingers from the mouth to the nose. All tableware and furnishings used are traditional crafts from Ishikawa and are also available for purchase. Please enjoy, together with your meal, the charm of these crafts that can truly be appreciated through actual use.
