About Course Menu
In order to create a firm texture, we knead the dough with minimal water, then insert it into the long tube of the traditional Venetian tool "torchio" to extrude the pasta manually. We endeavor to create ideal pasta dough by vacuuming out the air, allowing you to savor the aroma of the flour. Please enjoy our restaurant's proudly handmade pasta.
