For the vinegar, we use red vinegar. Red vinegar is made by aging pure sake lees vinegar and sake lees over a long period, allowing the yeast and koji in the lees to work, gradually transforming the lees from an amber hue to a rich brown color while softening them. Since the Edo period, this red vinegar has been used in vinegared rice for Edomae sushi. Sushi rice made with this red vinegar has a golden color and a fine aroma, and is known among sushi chefs as “golden shari.” We use a blend of red vinegar and the finest pure rice vinegar, so please enjoy the harmony and perfect balance between the topping and the sushi rice. <About our toppings> We carefully select seasonal ingredients, focusing on seafood from nearby waters.
