About the Sushi Rice
We use Koshihikari rice.
We use red vinegar for our sushi rice. Red vinegar is made by aging pure sake lees vinegar and sake lees over a long period. As the yeast and koji in the sake lees continue to work, the lees gradually soften and change in color from amber to a rich miso-brown. Since the Edo period, this red vinegar has been used in Edomae sushi rice. Sushi rice made with this red vinegar has a golden hue and a wonderful aroma, and is known among sushi chefs as kin-shari, or “golden sushi rice.”
We use a blend of red vinegar and the finest pure rice vinegar, allowing you to enjoy the harmony and balance of the topping and the sushi rice.
