As one example, this course showcases Kappo KOH’s signature composition. It opens with five varieties of seasonal appetizers, followed by three kinds of sashimi featuring blackthroat seaperch and golden eye snapper. A dobin-mushi soup adds comforting warmth, while grilled whole fish and tempura offer a delightful contrast of umami and texture. After refreshing the palate with vinegared junsai and mozuku seaweed, savor the lingering luxury of two kinds of steak: Miyazaki A5 sirloin and fillet. The meal concludes with kamameshi rice topped with Hokkaido ikura and purple sea urchin, and is complemented by a dessert of Shine Muscat grapes and mango. With seasonal changes to the menu, each visit offers something new to enjoy.
