The stars of our yakitori are "Echigo no Tori," allowing you to taste the flavors of the owner's hometown, Niigata, and the rich "Jiyoukei" from Chiba Prefecture. We carefully select the most suitable chicken for each part and hand skewer them daily. The skewers are tightly packed to ensure that as soon as you bite into them, the juices spread. We primarily season with salt, using seawater salt from Sasagawa Nagare in Niigata to straightforwardly express the quality of the ingredients. For grilling, we use Kishu Binchotan "Hosomaru." By enveloping the skewers in the smoky aroma that rises as the fat drips, we achieve a finish that is crispy on the outside and tender on the inside. Moreover, our long-favored closing dish of Chinese noodles is a signature bowl that concludes the lingering taste of yakitori.
