The star of our yakitori is the "Koshi no Tori" from the owner's hometown of Niigata, known for its unique flavor, and the rich-tasting "Jiyou Chicken" from Chiba Prefecture. We carefully select the appropriate chicken for each part and skewer them manually one by one every day. The skewers are designed, packed densely with meat, to release juices as soon as you take a bite. We primarily season with just salt, using seawater salt from Sado's Sasakawa Nagare in Niigata, to perfectly express the quality of the ingredients. For grilling, we use Kishu Binchotan charcoal, specifically "Hosomaru." This method imparts a smoky aroma from the dripping fat, resulting in a finish that's crispy on the outside and tender on the inside. Additionally, our celebrated Chinese noodles, enjoyed for years, provide the perfect finish to your yakitori experience.
