At estY, we carry forward the life and time entrusted to us by producers across Japan, transforming them into each dish through the techniques of French cuisine and a distinctly Japanese sensibility. We weave together seasonal ingredients and scenery that can only be encountered on that particular day, in that singular moment, into one course. To honor the finest ingredients available each day, our menu changes according to the season and our daily sourcing.
