At estY, we carry the life and time entrusted to us by producers from across Japan into each plate, through the techniques of French cuisine and the uniquely refined sensibility of Japan. We weave together seasonal ingredients and fleeting scenes that can only be encountered on that particular day, in that singular moment, into one course. To honor the finest ingredients of the day, our menu changes with the seasons and daily availability.
