Local gastronomy that maximizes the blessings of Niigata. At our restaurant, we use 99% of ingredients sourced from Niigata, showcasing the flavors of each season with rare wild vegetables and wild mushrooms not found in general distribution, homegrown produce, and fermented foods unique to snowy regions. Especially in winter, we introduce special dishes that vividly reflect Niigata's food culture. Our game dishes, utilizing techniques of fermentation and aging to maximize umami, and dishes leveraging ingredients stored in snow rooms, allow you to taste the essence of Niigata with every bite. Experience a world of gourmet dining crafted by a Michelin-starred chef that you won't find anywhere else. To accompany our cuisine, we offer drinks that honor Niigata's terroir. We provide a selection crafted with a commitment to local production for local consumption, including Niigata craft beer, ginger ale and plum juice made from personally harvested ingredients, and local teas. Our wine selection focuses on over 200 carefully chosen varieties primarily from Burgundy and Bordeaux in France.
