Our restaurant uses 99% Niigata ingredients to showcase seasonal flavors through rare wild vegetables and natural mushrooms that aren't widely distributed, homegrown vegetables, and snow country-specific fermented ingredients. Especially in winter, we offer special dishes that deeply reflect Niigata's culinary culture. With the use of fermentation and aging, our game dishes that maximize umami and dishes utilizing materials stored in snow chambers allow you to experience the essence of Niigata with every bite. Enjoy an unparalleled gastronomic world crafted by our Michelin-starred chef. Our selection of beverages to enjoy alongside our dishes also honors the terroir of Niigata. We offer a range of locally-sourced drinks, including Niigata craft beer, ginger ale and plum juice made from self-harvested ingredients, and local tea, all emphasizing local production and consumption. We carry over 200 meticulously selected wines, focusing primarily on Burgundy and Bordeaux from France.
