After honing my skills across various parts of Europe, including France, I opened Restaurant Sansa at the entrance to the Kasuga Onsen Village in Nagano Prefecture in 2014. This location, blessed with excellent water and air, the treasure of a chef, and wonderful ingredients, has been our base. At our restaurant, we offer course dishes that reflect the rich nature of the region, using seasonal ingredients unique to Shinshu. We source fresh vegetables, wild plants, mushrooms, rice, wheat, beans, honey, fruits, nuts, oil, river fish, beef, pork, lamb, chicken, game meat, fertilized eggs, freshly squeezed milk, cheese, herbs, and more from local farmers, ensuring a rich variety of seasonal ingredients. We also offer premium drinks such as carefully selected Nagano wines and local sake that complement the dishes. Enjoy cuisine that utilizes materials directly sourced from local producers in our restaurant, set in a quiet countryside landscape. We aim for local production for local consumption, allowing you to savor each dish that maximizes the natural taste of the ingredients in a refined space.
