After years of honing our skills across Europe, including France, we opened Restaurant Sansa in 2014 at the entrance to the Kasuga Onsen-kyo in Nagano Prefecture. We have reached this place where excellent water, air, and ingredients—the treasures of a chef—are all present. Our restaurant offers course meals that reflect the rich nature of the region, using seasonal ingredients unique to Shinshu. We have a variety of fresh seasonal ingredients including vegetables, wild plants, mushrooms, rice, wheat, beans, honey, fruits, nuts, oils, river fish, beef, pork, lamb, chicken, game meat, fertile eggs, freshly squeezed milk, cheese, herbs sourced from local farmers. Moreover, we offer high-quality drinks including carefully selected wines and local sake from Nagano Prefecture that are perfectly paired with our dishes. Enjoy our cuisine, crafted with ingredients sourced directly from local producers, in a refined space nestled in a serene countryside setting.
