A kaiseki course with a full selection of dishes that lets you savor the bounty of Shinshu’s mountains and seas in greater depth. Enjoy carefully prepared plates that reflect the character of the region, including Shinano Yukimasu, Shinshu Salmon, lightly seared cutlassfish sashimi, Jibu-ni of Ogon Shamo chicken, and salt-grilled yamame trout. To finish, choose either seasoned rice cooked in a pot or tempura and soba.
