Firstly, let me explain about "Sawatori". 17 years ago, we opened Hakata Mizutaki Sawatori in Azabu-Juban, Tokyo. We take pride in being one of the historic restaurants that introduced Hakata Mizutaki to Tokyo. Our meticulous work has made our restaurant loved by celebrities, political figures, and famous people from various fields. For customers who are wondering, "What is Hakata Mizutaki?" let me explain. "Hakata Mizutaki", which originated in the Keio era, was so popular that it was also called "Hakata Stew", and spread from Hakata all over the country. Heisaburo Hayashida, born in Nagasaki, went to Hong Kong at the age of 15 in 1897 (Meiji 30), where he lived with and learned cooking from an English family. After returning to Japan, he arranged the consommé of Western cuisine and the chicken soup of Chinese style that he learned there. In 1905 (Meiji 38), he completed the Hakata Mizutaki, which is said to be its origin. In simple terms, it's a pot dish rich in chicken! Please enjoy the course of Sawatori's "Mizutaki" which focuses on chicken.
