■A Toasting Drink　We will prepare one glass of Yamaguchi local sake for you. *We can also substitute it with another drink upon request. Shunpanro, located in Shimonoseki, Yamaguchi Prefecture, became Japan’s first officially licensed restaurant to serve fugu cuisine in 1888, by authorization of Japan’s first Prime Minister, Hirobumi Ito. Since then, you can enjoy at our Tokyo restaurant the traditional flavors and masterful techniques that have been passed down through the generations. For our usuzukuri, we carefully assess the quality of each individual pufferfish to bring out its exquisite flavor and texture, and present it in the form of a large chrysanthemum blossom on fine porcelain such as Arita ware and Old Imari ware. *If you would like natural shirako, please write your request in the comment section when making your reservation. 12,100 yen per serving (tax and service charge included, from 2 servings).
